- 3 slices of ham (as large as possible) (90 grams)
- 2 eggs
- 50 grams of fresh spinach
- 50 grams of mushrooms
- 50 grams of onion
- Coconut oil
- Sea salt and black pepper
- Optional: lemon juice and fresh cilantro
Preparation method
- Chop the onion and slice the mushrooms.
- Heat a tablespoon of oil in a frying pan and fry the onion.
- Add the spinach and mushrooms and cook for a few minutes, until the spinach has shrunk and the mushrooms are almost done.
- Break the eggs over the vegetable mix and stir until the eggs are cooked.
